Bake a batch of Chocolate Banana Muffins for birthday parties, sleepovers, holidays and all other days. This simple recipe makes approximately 48 mini muffins or 16 standard size muffins. Either way you make they will be devoured!

Chocolate Banana Muffins Recipe

Ingredients:

  • 1 stick Butter, softened
  • 1/3 Cup Brown Sugar
  • 1/3 Cup White Sugar
  • 1 Egg
  • 1 1/2 Teaspoon Vanilla
  • 3 medium Bananas, mashed (approximately 1 cup mashed)
  • 1/2 Cup Sour Cream
  • 1 Cup Flour
  • 1/3 Cup Cocoa Powder
  • 1 Teaspoon Baking Soda
  • 3/4 Cup Semi Sweet Chocolate Chips

Instructions:

Preheat oven 350 degrees. Prepare mini muffin pan with cupcake liners or a generous layer of cooking spray then set it aside.

Beat the butter and sugars in a large mixing bowl until creamed. Then add egg, vanilla, banana and sour cream; continue to mix until well combined. Next add flour, cocoa and baking soda and stir until batter is blended.

Add a heaping tablespoon of batter to each muffin tin then sprinkle chocolate chips over the tops of muffins.

Bake mini muffins for 14-15 minutes at 350 degrees then remove the pan from the oven and allow it to rest on a cooling rack. Enjoy!

*If using a standard size muffin tin; bake for 18-20 minutes.
