Crockpots were made for Sundays. Am I right? Whether it’s Beer Chili Meatballs for the afternoon football game, a hearty pot of Chili for Sunday Dinner or Crockpot Minestrone Soup, Sundays should be easy. And crockpot meals are easy!

It is no secret that I am a huge fan of the crockpot. I am an even bigger fan of soup. Minestrone ranks at the top of my list and with the help of a crockpot this recipe takes about 10-15 minutes prep and about seven hours to cook.

There are two phases to this recipe. The first set of ingredients will need to cook for 6 – 6 1/2 hours. After that time, the second set of ingredients are added. This Crockpot Minestrone Soup requires another 20 minutes or so in the crockpot to cook the pasta.

The list of vegetables can easily be altered if you have likes or dislikes when it comes to Minestrone Soup. My family enjoys the flavor of Onions however they are not big fans of the texture of onions therefore I rarely cook with fresh Onions. Rather I will used dry or ground Onion seasoning.

Ingredients (1)
3 cans Vegetable Broth
4 cups V8 Juice 
2 cups Carrots, chopped
2 cups Potatoes, chopped
1 can Diced Tomatoes
3 Cloves Garlic, minced
1 tablespoon Italian Seasoning
1 1/2  teaspoon Ground Onion
1 teaspoon Salt
1/2 teaspoon Pepper

Ingredients (2)
1 small Zucchini, chopped
1 can Green Beans, drained
1 can Cannellini Beans, rinsed & drained
1 can Kidney Beans, rinsed & drained
1 cup Ditalini Pasta

(1) Spray slow cooker with Cooking Spray (or use a slow cooker liner). Add Tomatoes, Carrots, Potatoes, Garlic, all four seasons, Vegetable Broth and V8 to slow cooker. Cook on low for 6 – 6 1/2 hours.

(2) At the 6 – 6 1/2 hour mark, turn the crockpot on high then add Zucchini, Green Beans (drained), Cannellini Beans (rinsed & drained), Kidney Beans (rinsed & drained) and Pasta. Cook on high for an additional 20 minutes (or until pasta is soft).

Serve with crackers and if desired top with shredded Parmesan cheese. 

This recipe for Slow Cooker Minestrone Soup reheats well and makes enough for a week of lunches!
