Everything tastes better on a stick, or so I’ve heard. Corn Dog, Ice Cream, Cake (Pops); all three taste better on a stick but what about a Banana Split on a Stick?

Skip the Ice Cream in a Banana Split and you’re left with fresh fruit, chocolate and peanuts. Put them on a stick and you have a Frozen Summertime Treat On A StickSounds good to me!

Ingredients

  • 1 – 2 Bananas
  • 1 Lime
  • 6 Strawberries (medium – large)
  • 12 cubes Fresh Pineapple
  • 1 1/2 cups Milk Chocolate Chips
  • 1/4 Cup Chopped Peanuts

Directions

Begin by peeling and slicing bananas; to make 12 banana splits you will need 12 one inch slices. Cut the lime in half then squeeze fresh lime juice over the banana slices to prevent browning.

Next, cut the strawberries in half. Then core and cut the pineapple into one inch chunks (or a size similar to that of the bananas & strawberries). Again, you will need 12 pieces.

Add the fruit pieces onto the popsicle sticks by gently pushing the stick through the center of a chunk of pineapple then a piece of banana followed by half of a strawberry. Be careful to not push the stick through the top of the Strawberry.
Then place fruit popsicle sticks in freezer for 10-15 minutes.

Prepare a tray with a sheet of parchment paper (or wax paper).  Pour chopped nuts into a a shallow dish to be used for dipping.
When the fruit popsicles are ready to be removed from the freezer pour Chocolate Chips into a microwave safe bowl then heat on high for one minute. Stir Chocolate until all of the chips have melted and the Chocolate is smooth.

Remove the fruit popsicle sticks from the freezer. Next, dip the fruit into the melted chocolate then into the peanuts. Place each Banana Split on a Stick on the prepared tray to set.

A refreshing Frozen Summertime Treat made with the same ingredients as a Banana Split only without the ice cream and served on a stick.
