What side do you serve with your Tacos or any Mexican Meal? When it comes to a Mexican Dinner Side Dish the ‘go-to’ side of choice at our house is Easy Mexican Rice.
For as long as I can remember this side dish has been a favorite at our house. It is one that my guys could (and would) eat daily with no complaints.
Growing up my family made Mexican Rice with Green Chilies. And then, along came my ‘green chili despising’ husband. And so, along came Jalapeños. That’s right, we replaced Green Chilies with Jalapeños in our family favorite Mexican Side Dish. And we LOVE it!
Recipe for a Mexican Dinner Side Dish; Easy Mexican Rice
– Rice (Brown or White)
– 1 Cup Sour Cream
– 3/4 Cup Shredded Cheese, Divided
– 3 Tablespoons Jalapeños, Diced
– 1/2 Teaspoon Salt
– 1/2 Teaspoon Ground Black Pepper
Substitution: replace Jalapeños with Green Chilies
Prepare 4 servings of Rice per the box instructions. Mix cooked Rice, Sour Cream, 1/2 cup of Cheese, Jalapeños, Salt & Pepper together. Pour into a microwavable (or oven safe) casserole dish. Sprinkle the remaining Cheese over casserole. Warm in microwave or oven until Cheese topping has melted.
