Baked Fajita Taquitos (IN EGG ROLLS)

These Baked Fajita Taquitos are a healthier version of Taquitos.  They are filled with Chicken, Salsa, Peppers, Cheese then wrapped in Egg Roll Wraps.  And most importantly they are baked rather than fried.

Ingredients:
– 3 Boneless Skinless Chicken Breasts; Cooked & Shredded
– 1 Cup Salsa
– 1/2 Cup Black Beans; Drained & Rinsed
– 1 Cup Shredded Cheese
– Sautéed Bell Peppers (equivalent to 1 cup cooked)
– 18 Egg Roll Wraps
– Olive Oil
– Ground Black Pepper

Optional Garnishes:
Sour Cream, Guacamole, Cheese

Directions:
Preheat
oven to 375*, prepare a baking sheet by spraying it with cooking spray.  Saute Peppers then set aside.  Shred Chicken and mix in a medium bowl with Black Bean & Salsa.  Fill Egg Roll Wraps with Chicken mixture, Peppers, and Cheese.  Roll Wraps like burritos then wet the edge of the Wrap with water to “seal” it closed.  Place them fold side down on Baking Sheet.  Brush the tops of Taquitos with Olive Oil then sprinkle Pepper on top.  Bake at 375* for 25-30 minutes.
