A few quick tips:

  • Whenever I make any type of fudge I like to leave a bit of the parchment paper (or foil) hanging over the edges of the pan. After the fudge has set I use the edges of the paper to lift the fudge out of the pan before cutting it into squares.
  • Anytime I bake with peanut butter I spray a light coat of cooking spray in the measuring cup before filling it with peanut butter. It is a huge help when it comes to removing the sticky peanut butter from the measuring cup. I do the same with spatulas or mixing spoons when I am mixing something sticky.
  • When I need to add chocolate chips, candy pieces or nuts to the top of something like fudge I will spray the back of a spatula with a light coat of cooking spray then use the spatula to gently press the chocolate chips into the fudge.

  1. Prepare an 8x8 square baking dish with a sheet of parchment paper then set it aside.

  2. Begin by adding both the peanut butter and the butter to a large microwave safe mixing bowl then heat it in the microwave on high for one minute. Remove the bowl and stir the two ingredients with a wooden spoon or spatula then return the bowl to the microwave and heat it for an additional minute. Add the vanilla and stir the three ingredients together until they are well combined.

  3. Next, use an electric mixer to blend the powdered sugar with the peanut butter then add the powdered sugar to the peanut butter mixture in two parts. This will make it much easier and efficient to to mix. The fudge batter will be thick and will need to be mixed thoroughly as quickly as possible.

  4. When the peanut butter fudge is well combined spread it into your prepared 8x8 inch pan then sprinkle chocolate chips over the top of the fudge. Gently press the chocolate into the fudge before it begins to set then place the pan in the refrigerator.

  5. Chill fudge for one hour or until it is set then lift the fudge out of the pan and cut it into squares. Store in an airtight container. Enjoy!

I like to keep my fudge in the refrigerator but it can also be kept at room temperature.
