Muffin Tin Meatloaf Recipe

Muffin Tin Meatloaf by trishsutton.comLet me tell you a story about my husband… HE. LOVES. MEATLOAF.

In fact, on Thanksgiving my hubs gives thanks for Meatloaf rather than Turkey.

Yep!  That’s right, you will find Turkey AND Meatloaf on our table that last Thursday of November.

To make my life a little easier I found a way to make meatloaf in 30 minutes.

Ingredients:
– 1.5 pounds Ground Beef
– 1 jar of Chili Sauce (divided)
– 1 Egg
– 1/3 cup Bread Crumbs
– 1/4 cup diced Onion
– 1/4 cup Cooked Crumbled Bacon
– 1/4 cup Shredded Cheese
– 1 teaspoon Celery Salt
– 1/2 teaspoon Ground Garlic
– 1/2 teaspoon Ground Black Pepper

Directions:
Preheat oven to 400 degrees.  Prepare Muffin Tin by spraying 8 holes with Cooking Spray.  Mix Ground Beef, 2/3 Cup Chili Sauce, Egg, Bread Crumbs, Onion, Bacon, Cheese, and Seasons until blended well.  Form meatloaf mixture into 8 balls (almost the size of a baseball) then place each one into their own muffin tin hole.  Top each Mini Meatloaf with 1 tablespoon of Chili Sauce.  Bake at 400 degrees for 30 minutes.

Here’s hoping this recipe makes life a little easier for those Meatloaf Lovers out there.  Whether it be made on Thanksgiving or some other day.
