For as long as I can remember this side dish has been a favorite at our house.  It is one that my guys could (and would) eat daily with no complaints.

Growing up my family made Mexican Rice with Green Chilies. And then, along came my ‘green chili despising’ husband. And so, along came Jalapeños.  That’s right, we replaced Green Chilies with Jalapeños in our family favorite Mexican Side Dish.  And we LOVE it!

Easy Mexican Rice

Ingredients

  • Rice (Brown or White)
  • 1 Cup Sour Cream
  • 3/4 Cup Shredded Cheese, Divided
  • 3 Tablespoons Jalapeños, Diced
  • 1/2 Teaspoon Salt
  • 1/2 Teaspoon Ground Black Pepper

TIP: If you prefer green chilies over jalapeños, simply substitute the jalapeños with green chilies for a dish that is just as tasty.

Directions

Begin by preparing 4 servings of brown or white rice per the box instructions.

Then add the cooked rice and sour cream to a medium size mixing bowl and use a wood spoon to mix until the rice is covered with sour cream. Next add 1/2 cup of shredded cheese, jalapeños, salt and pepper to the rice and stir it until the ingredients are combined.

Finally, pour the rice mixture into a microwave safe (or oven safe) casserole dish.  Sprinkle the remaining cheese over the casserole then heat your Easy Mexican Rice in the microwave for 7-9 minutes on high or in the oven for 20 minutes at 350* degrees.

Serve warm and enjoy.
