Taco Tuesday is a THING at our house. We partake weekly! As long as dinner ends in ‘Tacos’ it is a good night at our house. Beef Tacos, Soft Tacos, Hard Tacos and Veggie Tacos; we do not discriminate. Of course, if I had to choose a favorite I would lean toward Shredded Chicken Tacos.

Shredded Chicken Tacos are an easy meal for practice and game nights. They take such little prep time and they leave so little to clean up in the kitchen. It just takes a minute to add Frozen Chicken Breasts to the crockpot in the morning and a few more minutes in the evening to shred the Chicken, add a can of RO*TEL and slice & dice fresh vegetables. After dinner, just wash the crock pot & the cutting board and the dishes are done. Easy.

Cinco de Mayo is coming up which means a double taco week for us! Shredded Chicken Tacos made with RO*TEL are perfect for Cinco de Mayo. Since they require such little time to prepare there will be plenty of time to enjoy Margaritas with family.

Shredded Chicken Tacos
Made with RO*TEL & Fresh Avocado

Ingredients:
1 Dozen Small Soft Taco Size Flour Tortillas
3 Frozen Boneless Chicken Breasts
1 Can RO*TEL – Original
1 Can RO*TEL – Chunky
1/2 Cup Hot Sauce
1 Fresh Avocado
1 Cup Shredded Cheese
Cilantro
1 Teaspoon Ground Jalapeño
1 Teaspoon Garlic Salt
1/2 Teaspoon Ground Pepper
Optional: Sour Cream

Directions:

Spray crockpot with cooking spray (or add a liner). Place Frozen Chicken Breasts in crockpot, add Ground Jalapeño, Garlic Salt and Pepper. Cook for 6-7 hours on low, 3-4 hours on high or until juice runs clear.  

Shred the Chicken in the crockpot then mix in one can of Original RO*TEL and a half cup of Hot Sauce.

Quick tip: Use an Electric Mixer to shred Chicken in seconds!

Allow the Chicken to simmer on the warm setting to absorb the chili and tomato flavors of RO*TEL while the rest of dinner is being prepared.

Slice or dice fresh Avocado, shred Cheese and chop fresh Cilantro. Pour the Chunky RO*TEL in a small bowl. 

If you need a quick Cooking Hack when it comes to either slicing or dicing an avocado, I have just that!

HACK: The Only Way to Slice or Dice an Avocado.

To serve:

Fill Tortilla with Shredded Chicken, top with Sour Cream, Avocado, Cheese, Cilantro and a spoonful of Chunky RO*TEL.

By the way, Original RO*TEL and Chunky RO*TEL are just two of the SIX zesty blends. All of which make meals simple and all of which I found at Walmart. (Aisle 10 at my store but just look for the ‘Hispanic Foods’ aisle.)

The produce section at Walmart also had the Fresh Avocado that I needed which made shopping for Shredded Chicken Tacos as easy as the prep and cleanup of Taco Tuesday.
