Spicy Chicken & Quinoa

Spicy Chicken & Quinoa is by far one of my favorite recipes.  Start to finish it can be ready to eat in less than an hour.  This dish goes great with tortillas or tortilla chips.

Spicy Chicken & Quinoa

Ingredients:
– 3 Chicken Breasts, cubed
– 2 1/2 tablespoons Olive Oil
– 1 sliced Green Bell Pepper
– 1 can Diced Tomatoes
– 1 can Black Beans (drained & rinsed)
– 1 can Corn (drained)
– 1 cup Quinoa (uncooked)
– 1 1/2 cup Chicken Broth
– 1 teaspoon Cayenne Pepper
– 1 teaspoon Garlic Salt
– 1/2 teaspoon Black Pepper

Optional Toppings:
– Shredded Cheese
– Sour Cream

Directions:

Heat 2 tablespoons of Olive Oil in a pan over medium heat on the stove then add cubed Chicken and cook thoroughly.

In a separate pan sauté bell pepper in 1/2 tablespoon of Olive Oil then add cooked peppers into the pan of chicken.   Top with the Seasonings, Tomatoes, Black Beans, Corn, Quinoa, and Chicken Broth.

Stir to combine.  Increase stove heat to medium-high, bring to boil.  Once mixture begins to boil reduce heat to simmer.

Cover and simmer for 25 minutes until Quinoa is cooked.

Mmmm…Mmmm… Good.
