There is no flipping required when it comes to this version of pancakes. Simply mix the batter, fill the muffin tins, bake and enjoy. Breakfast made easy.
Preheat oven to 350 degrees. Prepare a muffin tin with 12 cupcake liners or generously spray pan with cooking spray.
In a medium size mixing bowl whisk pancake mix, milk and eggs together until smooth. Add honey, syrup and vanilla and continue to stir until will combined.
Allow batter to rest for two minutes.
Fill each muffin tin 2/3 full.
Top batter with desired add-ins.
Sprinkle sugar over muffins, if desired.
Bake 16-18 minutes.
Allow muffins to cool for a few minutes before serving.
Honey can be replaced with additional maple syrup. Just use the same measurements. (1/2 cup maple syrup & no honey)
