Light And Lemony Cheesecake

Simple Guilt Free Recipe: Light And Lemony Cheesecake. When made with an almond crust this Cheesecake is so light that it only contains 295 calories from fat, 1.2 grams of sugar and 6.7 grams of carbohydrates.

Ingredients

  • 2 packages Cream Cheese (8 ounce blocks)
  • 1 box Sugar Free Lemon Gelatin
  • 1 cup Water
  • 1 cup Raw Almonds
  • 1/2 cup Butter

Instructions

  1. Preheat oven to 375* degrees.

  2. Spray a 9×9 cooking pan (or individual dessert dishes) with Cooking Spray. 

  3. Prepare crust by grinding Raw Almonds in Food Processor, pour ground almonds into a 9×9 baking pan, melt butter and pour over almonds then mix and press into the bottom of the pan. Bake for 20 minutes.

  4. Prepare filling by mixing the boiling water with Sugar Free Lemon Gelatin until gelatin dissolves then add the cream cheese and continue mixing until lumps disappear. 

  5. Pour over Almond Crust and refrigerate for one hour.
