Family breakfast & holiday brunch is made easy with this Chorizo Egg Casserole Recipe.
Preheat oven to 350*.
Prepare a 13×9 inch baking pan or casserole dish with a layer of non-stick cooking spray. Then arrange one layer of tater tot potatoes over the bottom of the prepared pan.
Whisk together eggs, milk and cheese in a medium size mixing bowl. If desired, add salt and pepper to egg mixture then mix until well combined.
Next pour egg mixture over tater tots. Then top the eggs with a layer of MorningStar Farms® Chorizo Crumbles.
Bake the Chorizo Egg Casserole for 45-50 minutes at 350* degrees. Serve warm.
Note: Oven time may vary; perform the toothpick test to the center of the Chorizo Egg Casserole and, if needed, return the pan to the oven for a few extra minutes.
