Chorizo Egg Casserole Recipe

Family breakfast & holiday brunch is made easy with this Chorizo Egg Casserole Recipe. 

Ingredients

  • 2 Cups MorningStar Farms® Chorizo Crumbles
  • 1 Bag Frozen Tater Tots (32 ounce)
  • 12 Eggs
  • 1/2 Cup Milk
  • 1 1/2 Cups Shredded Cheese
  • Salt & Pepper

Instructions

  1. Preheat oven to 350*.

  2. Prepare a 13×9 inch baking pan or casserole dish with a layer of non-stick cooking spray. Then arrange one layer of tater tot potatoes over the bottom of the prepared pan.

  3. Whisk together eggs, milk and cheese in a medium size mixing bowl. If desired, add salt and pepper to egg mixture then mix until well combined.

  4. Next pour egg mixture over tater tots. Then top the eggs with a layer of MorningStar Farms® Chorizo Crumbles.

  5. Bake the Chorizo Egg Casserole for 45-50 minutes at 350* degrees. Serve warm.

  6. Note: Oven time may vary; perform the toothpick test to the center of the Chorizo Egg Casserole and, if needed, return the pan to the oven for a few extra minutes.
