Easy Mexican Rice | Side Dish Recipe

Ingredients

  • 4 servings Rice (Brown or White) cooked
  • 1 cup Sour Cream
  • 3/4 cup Shredded Cheese divided
  • 3 tablespoons Jalapeños diced
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Ground Black Pepper

Instructions

  1. Begin by preparing 4 servings of brown or white rice per the box instructions.

  2. Then add the cooked rice and sour cream to a medium size mixing bowl and use a wood spoon to mix until the rice is covered with sour cream. Next add 1/2 cup of shredded cheese, jalapeños, salt and pepper to the rice and stir it until the ingredients are combined.

  3. Finally, pour the rice mixture into a microwave safe (or oven safe) casserole dish.  Sprinkle the remaining cheese over the casserole then heat your Easy Mexican Rice in the microwave for 7-9 minutes on high or in the oven for 20 minutes at 350* degrees.

  4. Serve warm and enjoy!
