Create creamy peanut butter chocolate chip fudge in just five minutes with this five ingredient easy microwave recipe.
Prepare an 8x8 square baking dish with a sheet of parchment paper then set it aside.
Begin by adding both the peanut butter and the butter to a large microwave safe mixing bowl then heat it in the microwave on high for one minute. Remove the bowl and stir the two ingredients with a wooden spoon or spatula then return the bowl to the microwave and heat it for an additional minute. Add the vanilla and stir the three ingredients together until they are well combined.
Next, use an electric mixer to blend the powdered sugar with the peanut butter then add the powdered sugar to the peanut butter mixture in two parts. This will make it much easier and efficient to to mix. The fudge batter will be thick and will need to be mixed thoroughly as quickly as possible.
When the peanut butter fudge is well combined spread it into your prepared 8x8 inch pan then sprinkle chocolate chips over the top of the fudge. Gently press the chocolate into the fudge before it begins to set then place the pan in the refrigerator.
Chill fudge for one hour or until it is set then lift the fudge out of the pan and cut it into squares. Store in an airtight container. Enjoy!
I like to keep my fudge in the refrigerator but it can also be kept at room temperature.
