This simple four ingredient recipe starts with a cake box and ends with soft sugary vanilla flavored cookies that are sure to hit the spot in very little time.
One of my Grandmother’s Christmas traditions was to bake soft monstrous size sugar cookies. We absolutely love them; however, baking my Grandma’s cookies is quite the production. Therefore, we only make them once a year. And, yes, that one time a year is at Christmas.
Fortunately, we have a much less time consuming and fewer ingredient “fix” during the Grandma’s Sugar Cookie off-season. Cake Box Sugar Cookies can be prepared in less than 10 minutes! Then after the dough sits in the refrigerator for an hour the baking time is also less than 10 minutes.
Sugar Cookies
4 Ingredient Cake Box Recipe
Ingredients
- Super Moist French Vanilla Cake Mix (I use Betty Crocker, 15.25 oz.)
- 2 Eggs
- 1/2 Cup Oil
- 1/2 Cup Sugar
Supplies
- Mixing Bowl
- Electric Mixer
- Wooden Spoon (or mixing spoon)
- Small Bowl
- Cookie Sheet
- Parchment Paper (or Silicone Baking Mat)
- Cooling Rack
Directions
Add the dry cake mix, eggs and oil to a large bowl then use a mixer to blend the ingredients. You may need to finish mixing the dough with a wooden spoon. Continue to mix until well combined.
Place the dough in the refrigerator to chill for 1 hour. Prepare pan with a sheet of parchment paper then set aside. Pour sugar into a shallow dish then set it aside.
After the dough has had time to chill preheat oven to 350* degrees then roll the dough into 1 1/2″ size balls. Roll each dough ball in sugar then place them on the prepared pan.
Bake for 8-10 minutes (or until the edges turn golden). Allow cookies to rest on baking sheet before transferring them to a cooling rack. Store in an airtight container. Enjoy!
