Preheat oven to 375*. Cream Eggs and Butter with a mixer in a large bowl. Add Brown Sugar, Baking Soda, Salt & Vanilla then continue to mix. Stir in Flour then add Oats and Chocolate Chips, fold until dough is well combined.
Spoon the cookie dough by two-tablespoon size scoops and place two inches apart onto a cookie sheet covered in parchment paper.
Bake at 375* for 10-12 minutes (depending on oven, watch for edges to brown). Recipe makes 4 dozen.
