Chewy Oatmeal Chocolate Chip Cookies

Chewy Oatmeal Chocolate Chip Cookies also known as “Disappearing Cookies” and “What Cookies?” at our house. A slightly sweet, speedy & simple recipe.

Chewy Oatmeal Chocolate Chip Cookies; also known as “Disappearing Cookies” and “What Cookies?” at our house.  My oldest happens to LOVE these, he might as well be a magician!  Warm out of the oven with a glass of Cashew Milk makes for a slightly sweet snack that disappears before the cookies are cooled.

As quickly as these slightly sweet Chewy Oatmeal Chocolate Chip Cookies disappear they are just as speedy & simple to make!

Chewy Oatmeal Chocolate Chip Cookies

Ingredients:

  • 2 Eggs
  • 1 Cup Butter, softened
  • 1 1/2 Cup Brown Sugar
  • 1 Teaspoon Baking Soda
  • 1 Teaspoon Salt
  • 1 1/2 Teaspoon Vanilla
  • 2 Cups Whole Wheat Flour
  • 3 Cups Old Fashioned Oats
  • 1 Cup Semi Sweet Chocolate Chips

Directions:
Preheat oven to 375*.  Cream Eggs and Butter with a mixer in a large bowl.  Add Brown Sugar, Baking Soda, Salt & Vanilla then continue to mix.  Stir in Flour then add Oats and Chocolate Chips, fold until dough is well combined.

Spoon the cookie dough by two-tablespoon size scoops and place two inches apart onto a cookie sheet covered in parchment paper.

Bake at 375* for 10-12 minutes (depending on oven, watch for edges to brown).  Recipe makes 4 dozen.
