No Bake Muesli Energy Bites
Ingredients:
- 2 Cups Nature Valley Toasted Oats Muesli
- 1 Cup Peanut Butter (I use Creamy)
- 1/4 Cup Pure Maple Syrup
- 1/4 Cup Brown Sugar
- 1 Teaspoon Coconut Oil
Directions:
Begin by adding the Muesli to a large mixing bowl then set it aside.
Next heat the peanut butter, pure maple syrup, brown sugar and coconut oil in a sauce pan over medium-low heat. Stir the wet ingredients occasionally to ensure the mixture does not burn then when it begins to soft boil set a timer for 2 1/2 minutes and allow liquid to continue to boil.
Pour the wet mixture over the bowl of Muesli and mix it well. Once it is well combined take two tablespoons of the combined mixture and form a ball with your hand. Place it on a wax paper lined pan. Continue to make Muesli Energy Bites until all of the dough has been formed into balls. Place the pan in the refrigerator 30 minutes.
Keep Muesli Energy Bites stored in a sealed container in the refrigerator.
