Chocolate & Peanut Butter Chex Squares

Over the years my husband has reminisced about the Chocolate & Peanut Butter “E.T. Bars” that were served in his Elementary School Cafeteria.  Whenever he describes them I am reminded of the Rice Krispie Scootcheroos that my Elementary School Cafeteria served.  YUM.  Not at all healthy BUT YUM.

Along with Rice Krispie Cereal, the Scootcheroos from my childhood included Chocolate, Peanut Butter & Butterscotch.  During my elementary years there were two days every month that my ‘lunch lady’ was the most popular person on campus.  Because… Scootcheroos.  Did I already say YUM?  

Chocolate & Peanut Butter Chex Squares include the same key ingredients of Chocolate, Peanut Butter & Butterscotch, however, rather than using Rice Krispie Cereal there is a substitute.  Chex Cereal.  Liked a little more by some but not quite as popular as the original for everyone.  The end result – YUM.

Chocolate & Peanut Butter Chex Squares


  • 6 Cups Chex Cereal (whichever you preferred)
  • 1 Cup Light Corn Syrup
  • 1 Cup Sugar
  • 1 3/4 Cups Peanut Butter, divided
  • 2 Cups Semi Sweet Chocolate Chips
  • 2 Cups Butterscotch Chips
  • 1 Teaspoon Vanilla

Prepare a 9×13 pan with parchment paper or coat with cooking spray.  Pour Cereal into a large mixing bowl then set aside.

In a small sauce pan heat Corn Syrup and Sugar over medium heat.  Stir occasionally until mixture begins to boil.  Remove from heat, add 1 1/2 cups of Peanut Butter and stir until smooth.  Pour mixture over Cereal and stir until well combined.  Press Cereal mixture into 9×13 pan.

In a medium sauce pan melt the remaining 1/4 cup Peanut Butter, Chocolate Chips, Butterscotch Chips and Vanilla over low heat.  Stir this mixture often until it is smooth.  Pour mixture over the top of the Cereal layer and use a spatula to spread evenly across the bottom layer.

Allow to cool completely before cutting into squares.  YUM!!

Tip:  Spray a light coat of cooking spray to the inside of the mixing bowl and onto the spatula before using either to mix this sticky & sweet creation.
