If you have been reading my blog for very long you likely know that I am a fan of all things SIMPLE. Especially if that thing simplifies my time in the kitchen.

The pressure cooker has, indeed, simplified dinners at my house. However, more recently than that genius invention I was introduced to a little kitchen magic in the form of fresh herbs. The actual form of said herbs come in the shape of pre-portioned cubes.

Garlic Roasted Potatoes
Pressure Cooker Recipe

INGREDIENTS:

  • 1 pound Fingerling Potatoes
  • 2 tablespoons Butter
  • 2 tablespoons Olive Oil
  • 4 cubes Dorot Gardens Crushed Garlic
  • 1/2 cup Vegetable Broth (or water)
  • 1 teaspoon Parsley flakes
  • Salt & Pepper

DIRECTIONS:

Set pressure cooker (or Instant Pot) to sauté then add butter and oil. Heat uncovered.

While the butter is melting cut potatoes lengthwise. After the butter has melted add potatoes and garlic to the pressure cooker. Cook potatoes on the sauté setting for 15-20 minutes, stirring occasionally.

Add vegetable broth (or water) then secure pressure cooker lid with the valve set to sealing. Select the manual setting, high and cook for 8 minutes.

Allow the pressure to release on it’s own for 10 minutes then open valve. Top potatoes with parsley, salt & pepper before serving.
