Sugar Cookie meet S’mores. Graham Cracker, Marshmallow & Chocolate, meet your new sweet companion. S’mores anytime! Make that Sugar Cookie S’mores Bites anytime.
I happen to be a girl that loves an ooey-gooey S’mores hot off the campfire. As luck would have it, I am rarely near a campfire which is why I rely on Indoor S’mores and S’mores Bark to satisfy the graham cracker, marshmallow and chocolate craving when it strikes.
And now I have a third indoor option to hit the spot when my S’mores craving strikes.
Sugar Cookie S’mores Bites
24 Sugar Cookie Dough Squares (1 Package premade Sugar Cookie Dough)
24 Chocolate Squares (2 Chocolate Candy Bars)
2 Graham Crackers
Keep all ingredients refrigerated until it’s time to bake S’mores Sugar Cookie Bites.
Preheat oven to 350 degrees. Spray a Mini Muffin Pan very generously with Cooking Spray. Place one cookie square (or cookie dough ball) into each opening in the muffin pan. Bake for 12 minutes.
Cut Marshmallows in half (kitchen shears work great) leaving 48 halved Marshmallows. Remove muffin pan from oven. Carefully press one Marshmallow into the top of each cookie. Return pan to oven and bake an additional 2 minutes at 350 degrees.
Top with a 2nd Marshmallow, return pan to oven and bake 1 minute. Remove pan from from oven. Gently press a Chocolate Square onto the top of each S’mores Sugar Cookie Bite. Sprinkle a few broken pieces of Graham Crackers along with the cracker crumbs over each cookie.
Place pan on a cooling rack to allow cookies to cool in muffin tin for 15 minutes. Slide a knife or spoon around the edges of each Cookie to loosen the sides, scoop each S’mores Sugar Cookie Bite out of the pan then allow them to cool completely on the cooling rack or in the refrigerator.
Serve at room temperature. Enjoy!!
