A Simple Guilt Free Recipe: Light And Lemony Cheesecake
Cheesecake Filling:
– 2 packages of Cream Cheese (8oz blocks)
– 1 small box of Sugar Free Lemon Gelatin
– 1 cup of boiling water
Almond Crust:
– 1 cup of Raw Almonds
– 1/2 cup of Butter
Preheat oven to 375* and spray a 9×9 cooking pan (or individual dessert dishes) with Cooking Spray. Prepare crust by grinding Raw Almonds in Food Processor, pour ground almonds into a 9×9 baking pan, melt butter and pour over almonds then mix and press into the bottom of the pan. Bake for 20 minutes.
Prepare filling by mixing the boiling water with Sugar Free Lemon Gelatin until gelatin dissolves then add the cream cheese and continue mixing until lumps disappear. Pour over Almond Crust and refrigerate for one hour.
Optional Toppings:
Ground Almonds, Whipping Cream, Sliced Strawberries
Substitution:
Replace Almond Crust with Graham Cracker Crust
