Buffalo Ranch Chicken & Bacon Baked Nachos

Buffalo Ranch Chicken & Bacon Baked Nachos

Such a long name, really.  When I said to my hubs “I just don’t know what else to call them”, he responded with “call them what they are – GOOD”. Regardless what we ‘name’ them they are GOOD.  And like most my recipes – SIMPLE.

Supplies Needed:

Ingredients:

  • 1 Bag Tortilla Chips
  • 1 Package Cream Cheese (8 ounce block)
  • 3/4 Cup Wing Sauce, divided (I use Frank’s Red Hot)
  • 4 Cooked Chicken Breasts, Cubed
    (Shredded Chicken would work just as well!)
  • Package Cooked Bacon Pieces, divided
  • 3 Cups Shredded Cheese
  • 1/4 Cup Ranch Dressing

Instructions:

Begin by preheating the oven to 425* degrees then prepare a cookie sheet by covering it with a piece of parchment paper.

Next pour the entire bag of tortilla chips onto the prepared cookie sheet. Spread the chips out over the pan to create an even layer then set the pan aside.

Add the block of cream cheese and 1/2 cup of wing sauce to a medium size sauce pan then heat it over low heat. Occasionally stir the two ingredients until the cream cheese has melted completely.

Next add the prepared cooked chicken to the creamy mixture then stir it until the chicken is completely covered in sauce. Then spread the buffalo chicken mixture over the chips and pour half of the bacon pieces over the chicken layer. Cover the chicken and bacon layer in shredded cheese then top with cheese with the remaining bacon pieces.

Place the pan of Buffalo Ranch Chicken Nachos in the oven and bake them for 10 minutes at 425* degrees or until the cheese has melted.

Remove the pan from the oven then drizzle 1/4 cup of wing sauce and 1/4 cup of ranch dressing over the pan of nachos.

Serve warm.

My hubs is not the only one who thinks my Baked Nachos are “GOOD”.  The college kids in my life immediately gave “blog approval” for this recipe.
