Bake a batch of Chocolate Banana Muffins for birthday parties, sleepovers, holidays and all other days. This simple recipe makes approximately 48 mini muffins or 16 standard size muffins. Either way you make they will be devoured!

Chocolate Banana Muffins Recipe

INGREDIENTS

  • 1 stick Butter, softened
  • 1/3 Cup Brown Sugar
  • 1/3 Cup White Sugar
  • 1 Egg
  • 1 1/2 Teaspoon Vanilla
  • 3 medium Bananas, mashed (approximately 1 cup mashed)
  • 1/2 Cup Sour Cream
  • 1 Cup Flour
  • 1/3 Cup Cocoa Powder
  • 1 Teaspoon Baking Soda
  • 3/4 Cup Semi Sweet Chocolate Chips

DIRECTIONS

Preheat oven 350 degrees. Prepare mini muffin pan with cupcake liners or a generous layer of cooking spray then set aside.

Beat butter and sugars in a large mixing bowl until creamed. Add egg, vanilla, banana and sour cream; beat until well combined. Stir in flour, cocoa and baking soda and mix until batter is blended.

Add a heaping tablespoon of batter to each muffin tin then sprinkle chocolate chips over the tops of muffins.

Bake mini muffins for 14-15 minutes at 350 degrees. If using a standard size muffin tin; bake for 18-20 minutes.
