How many times have you been told not to eat raw cookie dough? Eggless Edible Cookie Dough Bites, dipped in chocolate.
Years ago my aunts were enjoying a few bites of chocolate chip cookie dough. I can’t remember now if we were actually baking cookies or if they were just snacking on the ‘not so edible’ cookie dough. Either way, I would not partake. There were too many times that I had been told NOT to eat raw cookie dough.
Fast forward twenty-five plus years and I have had my fair share of raw egg filled cookie dough. So far, so good. However, since I am not quite sure when my raw egg luck will run out I decided it was fine time I come up with edible chocolate chip cookie dough. And then I dipped it in chocolate. Because, why not?
Eggless Edible Cookie Dough Bites
INGREDIENTS
1/2 Cup Brown Sugar
1/4 Cup White Sugar
1 Stick Butter, softened
1 1/2 Teaspoons Vanilla
1/2 Teaspoon Salt
1 Cup All Purpose Flour
1 Tablespoon Milk
1 1/2 Cups Miniature Chocolate Chips, divided
1 Teaspoon Coconut Oil
ADDITIONAL
Toothpicks (or small cake pop sticks)
Parchment Paper
Place a sheet of parchment paper on a cookie sheet or platter; set aside.
In a medium size mixing bowl cream brown sugar, sugar, and butter together with a mixer. Continue to mix until it is fluffy then add the vanilla and salt. Beat until well combined.
Add flour; mix until it is combined then add milk. Mix until dough starts to form. If the dough appears to be too dry just add a splash of milk, or if too wet just add flour.
Fold in 1/2 cup of the miniature chocolate chips with rubber spatula. Roll edible cookie dough into 1-inch balls.
Set cookie dough on prepared pan then stick a toothpick into each dough bite. Place plan in the freezer for ten minutes.
Prepare chocolate dip; pour the remaining cup of miniature chocolate chips into a small microwaveable bowl. Add coconut oil then heat in the microwave for 45 seconds. Mix until smooth.
Dip each Edible Chocolate Chip Bite into the melted chocolate then place them back on the baking sheet. Refrigerate until the chocolate sets.
Let stand at room temperature for a few minutes before serving. Store these eggless dough bites in an airtight container in the refrigerator.
