When my oldest was playing high school football I would make these Peanut Butter Power Squares weekly. They are packed with protein and taste much better than most protein bars.
Save a couple ripe bananas add Oats, Peanut Butter and a few other ingredients and you have Peanut Butter Power Squares. They make a simple breakfast on the go and serve as a perfect after school or pre workout snack.
Peanut Butter Power Squares Recipe
Ingredients:
- 1.5 cups Quick Cooking Oats
- 1/4 cup packed Light Brown Sugar
- 1 teaspoon Baking Powder
- 1/2 teaspoon Salt
- 1/2 teaspoon Ground Cinnamon
- 1 teaspoon Vanilla
- 1/2 cup Almond Milk
- 1 Egg, beaten
- 2 medium sized Bananas, mashed
- 1/4 cup Creamy Peanut Butter
Directions:
Preheat oven to 350* degrees then spray an 8×8 pan with cooking spray and set it aside.
Begin by mixing the dry ingredients in a medium size mixing bowl; stir together the oats, sugar, baking powder, salt and cinnamon then set the dry mix aside. Next, use a fork to mash bananas in a small mixing bowl then mix in the vanilla, milk, and eggs until well combined.
Then add the wet ingredients into the bowl of dry ingredients. Add the peanut butter to the bowl then mix well. Next, pour the mixture into the prepared pan and bake for 20 minutes at 350* degrees. Allow cooling time before cutting them into bars or squares. Store in an airtight container.
