A simple warm side dish made easy with NEW Land O Lakes® Soft Squeeze™ Spread. These Potato Packets can be made in the oven or on the grill.
It is no secret that I live by simple recipes. Thanks to my recent introduction to the NEW Land O Lakes® Soft Squeeze™ Spread life in the kitchen just got even easier for me. This made with real butter squeezable convenience makes creating one of my family’s favorite sides even easier.
Easy Potato Packets Recipe
Made with Land O Lakes Soft Squeeze Spread
Ingredients:
- 6 Red Potatoes
- 4 Tablespoons of NEW Land O Lakes® Soft Squeeze™ Spread
- 2 Cups Shredded Cheese
- 1 Cup Crumbled Bacon Pieces (I use Turkey Bacon pieces.)
- 1 Cup Sour Cream
- 2 Green Onions
- Salt & Pepper
Supplies:
- Heavy Aluminum Foil
- Cooking Spray
- Spatula
Directions:
Preheat oven to 375 degrees (or preheat grill to medium high heat). Prepare aluminum foil by cutting it into four large squares to create the potato packets then set the squares aside.
Wash potatoes then pat them dry before cutting them into cubes. Then spray a layer of cooking spray on each foil square. Next, divide the cubed potatoes into fourths and add potatoes to the center of each foil square.
Squeeze 1 tablespoon of Land O Lakes® Soft Squeeze™ Spread on top of the potatoes. (This happens to be my 7 year old’s favorite part! Turns out he is a big fan of soft squeeze spread!) Then add 1/2 cup of shredded cheese onto the potatoes followed by the desired amount of bacon pieces.
Wrap each foil square into a secure packet then pierce the top of the foil a few times with a fork.
Place potato packets directly on the in the oven racks (or on the the grill then cover grill). Cook for 45 minutes then use a spatula to remove the potatoes from the heat. Allow the packets to rest for a few minutes before carefully unfolding them.
Clean and dice green onions then top the cooked potatoes with sour cream, diced green onions, salt & pepper. Serve warm.
