Ingredients
- 4 cups Fresh Spinach
- 1 1/2 cups Grape Tomatoes, halved
- 1 1/2 cups Cucumber, chopped
- 1/4 cup Cilantro, diced
- 2 Avocados, cubed
- 3 tbsp Olive Oil
- 1 1/2 tsp Garlic Salt
- 1 tsp Ground Pepper
- Lime Juice

Begin by cutting the tomatoes in half then place them in a medium size mixing bowl. Next peel and chop the cucumber then dice the cilantro and add both veggies to the bowl with the tomatoes. Gently fold in 3tablespoons of olive oil then set the bowl aside.

Next, cube the avocados then add them to a small mixing bowl.Stir in a little lime juice with the avocado to keep it from browning then add the avocado into the bowl of prepared veggies.

Add garlic salt and ground pepper then use a spatula to gently mix the ingredients. After all of the vegetables are covered well in olive oil and spices cover the bowl and place it in the refrigerator for 30 minutes.

Removed the chilled bowl from the refrigerator and gently stir to mix in any oil that settled in the bowl. Serve cold as a side dish or over a bed of spinach leaves as a salad. Enjoy!
