Butterscotch Dipped Granola Bites
- 2 1/2 Cups Quaker® Simply Granola Oats, Honey & Almonds
- 1/4 Cup Creamy Peanut Butter
- 1/2 Cup Honey
- 1/2 Cup Quick Oats
- 1 1/2 Cups Butterscotch Chips
- 1/2 Tablespoon Cooking Oil
- White Crystal Sprinkles (if desired)
Prepare a baking sheet with wax paper (or parchment paper).
Mix Quaker® Simply Granola Oats, Honey & Almonds, Peanut Butter and Honey in a medium bowl until all ingredients are well combine.
Place the bowl in the refrigerator and chill mixture for 1 hour.
After an hour remove the bowl from the refrigerator, mix in Quick Oats then form small packed balls out of 1 – 1 1/2 tablespoons of mixture.
Lay the ball shaped Granola Bites onto the prepared pan then place the pan in the refrigerator for 30 minutes.
After chilling the formed bites pour Butterscotch Chips into a microwave safe bowl or Pyrex measuring cup. Melt chips in the microwave (high heat) for one minute. Stir then heat Butterscotch an additional 15-30 seconds if needed. Once all of the chips have melted add 1/2 Tablespoon of Cooking Oil and mix well.
Use a fork (spoon or toothpick) to place chilled Granola Bites into the melted butterscotch. Flip each one over until well covered then place the Butterscotch Dipped Granola Bites onto pan and sprinkle them with White Crystal Sprinkles.
Put the pan back into the refrigerator for an additional 30 minutes or until the butterscotch has set. Store Butterscotch Dipped Granola Bites in the refrigerator in an airtight container.
